Carrot Cake

INGREDIENTS
1 1/2 cups oil
2 cups sugar
3 eggs
2 cups flour
2 tspn cinnimon
2 tspn baking soda
2 tspn vanilla
1 tspn salt
2 tspn baking powder
1 pkg (7 oz) coconut
2 cups shredded carrots
1 cup chopped walnuts
1 can crushed pineapple and juice (3 oz)

Combine indredients. Pour into a 9x12 greased pan and bake at 350° for one hour.

TOPPING
1-3oz cream cheese
1 cube butter
1 tspn vanilla
3/4 box powdered sugar.
