NUT BARS


1 1/2 cups butter
1/2 cup sugar
1 egg
1 tspn vanilla
2 cups flour
1/4 cup honey
3/4 cup brown sugar
1/4 cup whipping cream
1 12oz can lightly salted mixed nuts

Preheat oven to 350 degrees. Butter a 13x9x3 inch pan; set aside. In a large mixing bowl of electric mixer, beat 1 cup butter with sugar until light and fluffy; beat in egg and vanilla. Stir in flour until well mixed; pat down into pan. Bake until edges are brown and center looks dry, 15 minutes. Transfer to wire rack while making topping. Maintain oven temperature.
In a heavy saucepan over medium heat, heat 1/2 cup butter with honey until butter is melted. Stir in brown sugar, bring to a boil. Boil without stirring for exactly 2 minutes; remove from heat. Stir in crean and nuts; immediately spoon caramel mixture over crust. Bake until caramel bubbles, 10 minutes. Cool and cut into 2x2 inch bars.
