RUM CHOCOLATE CAKE
Ingredients
1 oz unsweetened chocolate
1/2 cup water
1/2 cup butter
1 1/2 cups light brown sugar
3 eggs
1 1/2 tspn baking powder
1 3/4 cups sifted cake flour
1/4 tspn salt
1/2 tspn baking soda
1/4 cup dark rum
Melt chocolate in water over very low heat. Cream butter until fluffy. Gradually beat in sugar. Beat in eggs one at a time. Add flour, baking powder, salt, and soda.
Bake in two 9" or three 8" pans at 350. (8" for 15-20 min)(9" for 20-25 min) Cool 5 minutes before turning out of pan.
Frosting
Melt 3 oz unsweetened chocolate with 1/2 cup rum over low heat. Stir in 2 tspn vanilla extract.
Add 4 cups powered sugar, 1 cup at a time. Beat in 1/4 cup butter. Add a little more rum if necessary to make frosting of spreading consistency.
