Boston Brown Bread

    Ingredients

      1 1/4 C whole wheat flour
      1 tsp baking powder
      1 tsp baking soda
      1 tsp grated lemon zest
      1 tsp cinnamon
      1/8 tsp salt
      1/2 C- LF buttermilk
      1 egg
      3 T molasses
      2 T brown sugar


    Preheat oven to 375 degrees, Spray an 8" x 4" loaf pan with cooking spray..

    In a medium bowl, combine flour, baking powder, baking soda, lemon peel, cinnamon and salt..

    In another bowl, combine buttermilk, egg, molasses and brown sugar.

    Pour over flour mixture, mix quickly to blend do not over mix..

    Transfer to prepared loaf pan.

    Bake until toothpick inserted in the center comes out clean, 35-40 minutes, Cool completely on a rack.
