Chocolate Zucchini Bread

    Servings: 24 / 3 units per serving


    Ingredients

      2 ½ c all-purpose flour
      ½ c unsweetened cocoa powder
      1 ½ tsp baking powder
      1 tsp baking soda
      1 tsp cinnamon
      ¾ tsp salt
      1 ½ c sugar
      ¾ c egg substitute
      ½ c unsweetened applesauce
      1/3 c oil
      2 tsp vanilla
      2 c packed, grated zucchini
      ½ c mini chocolate chips


    Preheat oven to 350. Spray 2 loaf pans with non-stick spray.

    In a large bowl combine flour, cocoa, baking powder, baking soda, cinnamon, and salt. Set aside.

    In a medium bowl, whisk together sugar, egg substitute, applesauce, oil, and vanilla. Stir in zucchini.
    Add wet ingredients to dry ingredients. Stir until just moistened. Fold in choc. chips. Spread batter evenly in prepared pans.

    Bake for 50 minutes, or until a toothpick inserted in center of loaf comes out clean.
    Cool 5 minutes in pans. Remove from pans and let cool on wire rack before serving
