Pineapple Dessert

    Ingredients

      20 oz crushed Pineapple, artificially sweetened
      8 oz SF Lemon Jell-O
      3 C boiling water
      8 oz Light Cream Cheese
      16 oz lite Cool Whip
      3/4 C splenda
      3 T water
      2 T flour
      2 lg egg yolks


    Drain pineapple, saving juice. Dissolve gelatin in boiling water, add pineapple.

    Pour into a 13x9" dish; chill until almost set, about 45 minutes. Beat cream cheese and cool whip until smooth carefully spread over gelatin; chill for 30 minutes. Combine splenda, lemon juice, water, flour, egg yolks and reserved pineapple juice in a saucepan over medium heat bring to a boil, stirring constantly. Cook for 1 minute or until thickened.

    Cool and carefully spread over cream cheese layer.. Chill for at least 1 hour.
