Six Week Muffins

    Servings: 72/ Unit per serving=1


    Ingredients

      15 oz raisin bran (unsweetened cereal)
      5 C flour
      5 tsp baking soda
      3 C sugar (may use 2 1/2 C)
      2 tsp salt
      1/4 C raisins (optional)
      4 eggs
      1 qt buttermilk (4 cups)
      1 C oil


    Mix first 6 ingredients.. Add eggs, buttermilk, oil, and mix thoroughly.. Cover batter and refrigerate overnight before using. (Prepare muffin pans with non-stick spray)

    Bake at 400 degrees for 20 minutes or 350 degrees for 25 minutes.

    Batter will keep in refrigerator for 6 weeks.. Can freeze muffins after baking.
