Ingredients
1/2 C chopped pecans
3 T brown sugar
1 T lite sour cream
3 sm ripe bananas
1 lg egg
1 1/2 C pancake mix
1/2 C sugar
2 T vegetable oil
Combine pecans, brown sugar and sour cream and set aside. Mash bananas, add egg, pancake mix, sugar and oil and stir just until pancake mix is moistened.
Place paper liners in muffin tin and spray with non stick spray.. Fill 3/4 full with batter place a spoonful of pecan mixture in the center top of each muffin.
Bake 400 degrees for 18-20 minutes or until golden brown.. Cool on rack.
