Bran Muffins

    Servings: 12/ Unit per serving=2


    Ingredients

      2 C Fiber-one cereal
      1 ½ C 1% milk
      1 ¼ C flour
      ¼ C sugar
      ¼ C apple butter
      ¼ C egg substitute
      1 ½ tsp cinnamon
      1 T plus 1 tsp baking powder
      ½ C raisins
      ¼ C finely chopped nuts
      Small can crushed pineapple, drained


    Combine cereal and milk and let stand 15 minutes. In separate bowl, combine flour, sugar, cinnamon and baking powder, Add apple butter and egg substitute to cereal mixture stir.

    Add wet mixture to dry ingredients mix thoroughly, Fold in raisins, nuts and pineapple.

    Bake in 12 non-stick sprayed muffin tins at 350 degrees for 15-17 minutes.

    Let muffins stand for 5 minutes before removing to rack to completely cool.
