Ingredients
1 C whole wheat flour
1/2 C flour
1/2 C brown sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp nutmeg
1 tsp cinnamon
1/4 tsp salt
2 T vegetable oil
1 lg egg
1/4 C skim milk
1 C grated carrot
8 oz crushed pineapple in juice
Mix flours, sugar, baking powder, baking soda, and seasonings..
In a separate bowl, mix oil, egg, milk, carrots, and pineapple W/ juice..
Pour into dry ingredients, mix until just moistened.. Spoon into sprayed muffin pans..
Bake 350 degree 20 25 minutes.
