WW Pumpkin Muffins 2

    Yield: 12 muffins / Each serving is 1 milk, 1 protein, 1 bread,
    1 vegetable and 1 fruit / Estimate 1 Unit per muffin

    Ingredients

      1 C pumpkin
      2 tsp pumpkin pie spice
      1 tsp cinnamon
      1 tsp baking soda
      8 pkgs sweet n low
      2 eggs
      1 tsp vanilla
      2/3 C dry powder milk
      6 T flour
      1/2 C grated carrots
      4 T raisins


    Mix dry ingredients together. Combine eggs & vanilla, add pumpkin. Combine with dry ingredients and mix well. Stir in carrots and raisins.

    Pour in muffin pan sprayed with pam. Bake 350 for 15 min.
