Breakfast in a cup

    Ingredients

      4 oz RF sausage
      1/4 C chopped green pepper
      1/4 C chopped onion
      1 C liquid egg substitute
      1 lge egg
      1 can (4 oz) sliced mushrooms, drained
      1/2 C (2 oz)shredded RF cheddar


    Preheat oven to 350, Coat a 6 cup muffin pan with cooking spray. In med skillet, saute sausage, pepper, onion until sausage is browned. Remove from heat and cool slightly.

    Stir in egg substitute, egg and mushrooms. Spoon evenly into prepared muffin pan, Sprinkle with cheese. Bake 20 min, or until egg is set.
