Pizza Omelet

    Ingredients

      2 eggs or eggbeaters
      2 T water
      Salt and pepper to taste
      Cooking spray
      3 T pizza sauce
      5 slices pepperoni
      1/4 C shredded Mozzarella cheese
      1 T grated Parmesan cheese


    Beat eggs & water, season with salt and pepper. Spray an 8-inch non-stick skillet with cooking spray. Pour in egg mixture, gently push cooked portions towards center. When eggs are almost set spread pizza sauce over half of the omelet. Top with pepperoni and Mozzarella cheese. Fold the omelet in half and slide onto a warm plate. Sprinkle with Parmesan cheese.
