Spinach Omelet

    Ingredients

      1 9oz. pkg of chopped spinach
      (thawed and drained)
      6 lge eggs or eggbeaters
      1% milk
      3 slices of mozzarella cheese
      salt and pepper to taste


    Thaw and squeeze the water out of spinach… put in skillet and warm over low heat… Remove spinach… Scramble eggs using a little milk. (or use EB) Pour into skillet. Add spinach and scramble with the cheese. Cook on low heat until eggs are done. Salt and pepper to taste.
