Vegetable Quiche Cups 2

    Ingredients

      1 pkg (10 oz) frozen chopped spinach
      3⁄4 C egg substitute
      3⁄4 C shredded RF cheese
      1⁄4 C diced green bell peppers
      1⁄4 C diced onions
      3 drops hot-pepper sauce (optional)


    Microwave spinach 2 1/2 minutes on high. Drain excess liquid.

    Line a 12-cup muffin pan with foil baking cups. Spray cups with cooking spray.

    Combine egg substitute, cheese, peppers, onions, and spinach in a bowl, mix well, divide evenly among muffin cups.

    Bake at 350° for 20 minutes, until knife inserted in the center comes out clean.

    Quiche cups can be frozen and reheated in the microwave. Any combination of vegetables and RF cheeses may be used.
