Vegetable Quiche Cups

    Ingredients

      3/4 C eggbeaters, or 3 lge eggs
      or 3/4 C egg whites
      1 (10 oz.) pkg frozen chopped spinach
      3/4 C shredded RF cheese
      1/4 C diced red or green peppers or both
      1/4 C diced onions
      Tabasco sauce to taste
      Salt & Pepper


    Heat oven to 350
    Line 12 cup muffin pan with foil baking cups, spray with cooking Pam.

    Thaw and squeeze spinach well, Mix spinach, egg substitute, cheese, peppers, onions, tabasco sauce, salt & pepper in a bowl...Fill the foil cups.

    Bake at 350 for 20 minutes, or until a knife inserted in the middle comes out clean. Remove from cups to serve.
