Cheesy Squash and Chicken Casserole

    Ingredients

      1 T -RF margarine
      1 C chopped onion
      6 C sliced or chopped squash
      1 can RF cream of chicken soup
      8 oz light sour cream
      1 C shredded RF cheddar cheese
      2 cooked chicken breasts/chopped
      12 RF Ritz crackers, crumbled
      2 T -RF margarine, melted


    Preheat oven to 350 degrees. Melt 1 T margarine in large skillet over medium to high heat; add onion and squash. Spray with nonstick cooking spray as needed (To maintain a good combination of texture sauté 3-4 cups squash and gradually add remaining). When squash is tender, add soup, sour cream, 1/2 cup cheese, and chicken. Stir over low heat until well blended.

    Pour mixture into casserole dish prepared with cooking spray.

    Combine crackers, 1/2 cup cheese, and melted margarine. Sprinkle cracker mixture on top of casserole.

    Bake 8-10 minutes until bubbly.
