Texas Jo Casserole

    Servings: 4 / Units per serving=6


    Ingredients

      8 oz extra lean ground beef
      1/2 C onion -- chopped
      1/2 C frozen corn kernels
      1 C sliced mushrooms
      1/4 C ripe olives -- sliced
      1 1/2 C cooked pasta -- rotini
      1 can tomato soup, RF, condensed -- (10-3/4 oz)
      1/2 C salsa -- chunky style
      1/2 T brown sugar -- or 1 T brown sugar twin
      1/3 C- LF cheddar cheese -- shredded


    Preheat oven to 350°. Spray an 8x8-baking dish with cooking spray.

    In a large skillet sprayed with cooking spray, brown meat and onion. Drain the meat and rinse it, return it to the skillet. Stir in corn, mushrooms, olives, and rotini pasta.

    Add tomato soup, salsa, brown sugar twin and cheddar cheese. Mix well to combine.

    Spread mixture into prepared baking dish. Bake 30 minutes.

    Place baking dish on a wire rack and let set for 5 minutes then serve.
