Hoisin Pork Stir-Fry

    Servings:4 (1 cup pork & 1/2 cup rice) Units=6


    Ingredients

      1 1/2 cups quick cooking rice
      3/4 lb. boneless pork loin, sliced thin
      2 tbsp. dry sherry
      1 tbsp. RS soy sauce
      1 tbsp. cornstarch
      1 tsp. sesame oil
      2 cups broccoli florets
      1 red pepper, seeded & chopped
      1/4 cup orange juice
      1/4 cup hoisin sauce
      1 tbsp. honey


    Cook rice by package directions, omiting fat and salt. Combine pork, sherry, soy sauce, and cornstarch in a bowl. Heat oil in large nonstick skillet over medium high heat. Add broccoli and red pepper, stir fry 3 minutes. Add the pork and stir fry 4 minutes. Add orange juice, hoisin, and honey and cook 2 minutes longer. Serve over rice.
