Ingredients
2 tsp Peanut or Vegetable Oil
1 C each diagonally sliced Scallions (Green Onions),Celery, and sliced Mushrooms
One Serving (w/chicken) - 5 Units 1 1/2 C cooked Instant Rice
One Serving (w/chicken) - 5 Units 1 oz cooked Pork, shredded
One Serving (w/chicken) - 5 Units 1 T Soy Sauce
One Serving (w/chicken) - 5 Units 1 Egg, lightly beaten
*NOTE - You can substitute 1 oz chicken, shredded, for the pork.
In 9 inch nonstick skillet heat oil; add vegetables, cook over high heat, stirring frequently, until tender-crisp, 3 to 4 minutes.
Add rice, pork, and soy sauce, cook stirring constantly, until rice is lightly browned, 2 to 3 minutes.
Stir in egg continuing to stir, until egg is set, about 1 minute.
