Stir Fried Scallops/Snow Peas w Ginger/Citrus Sauce

    Ingredients

      3/4 C chicken broth
      1/4 C orange juice
      2 T fresh lemon juice
      2 T soy sauce
      1 tsp dark sesame oil
      1 T sugar
      1 T cornstarch
      1/2 tsp salt
      1 T veg oil
      2 cloves garlic, finely chopped
      2 T finely chopped ginger
      1 1/2 lb sea scallops, halved
      1 lb snow peas, trimmed


    Combine broth, OJ, lemon juice, soy sauce, sesame oil, sugar, cornstarch and salt.

    In a large skillet or wok heat oil over med. high heat. Add garlic, ginger, stir fry 1 min Increase heat to high add scallops, stir fry about 2 minutes. Remove scallops..
    Add snow peas stir fry about 2 minutes, add broth mixture simmer 1 minute. Add the scallops back in, simmer 1 more minute. . Add shredded carrots or grated orange rind (optional).
