Ginger Peach Cupcakes

    Ingredients

      1 pkg yellow cake (pudding) mix
      15 oz Yellow Cling Peach Halves, In Extra Light Syrup
      2 egg white(s)
      1 tsp ground ginger


    Blend peaches W/syrup until lightly chunky (can use electric mixer).

    Add blended peaches, egg whites and ginger powder to dry cake mix.

    Blend ingredients until batter is smooth and fluffy.

    pour into mini muffin pan.

    Bake at 350 degrees until inserted toothpick comes out clean, about 20 minutes.
