Ingredients
2 lg egg whites
1/8 tsp cream of tartar
3/4 C sugar
3 T unsweetened cocoa powder
1/2 tsp vanilla extract
1/4 C ground almonds
Preheat oven to 275 degrees, Line 2 cookie sheets with wax paper, spray lightly with vegetable cooking spray..
In a large bowl beat egg whites and cream of tartar to stiff peaks…Add sugar 1 tablespoon at a time beating well after each addition..
Add cocoa powder and vanilla, beat well to blend, Fold in almonds.
Drop by tablespoonfuls onto cookie sheets.
Bake 20 minutes or until meringues are crisp on the outside.. Cool on cookie sheet 10 minutes.
Remove cookies from wax paper while warm and cool on wire racks.
Store in airtight container.
