Coconut Meringues

    Ingredients

      3 egg white(s)
      1/8 tsp cream of tartar
      1 tsp vanilla extract
      2/3 cup sugar
      1/2 cup unsweetened coconut


    Preheat oven to 300 degrees, Spray large cookie sheet with Pam.

    Combine egg whites, cream of tartar, and vanilla, Beat until the whites form soft peaks. Slowly add sugar, beat until stiff peaks form and mixture becomes glossy (should be fairly thick). Fold in coconut.

    Drop by large teaspoonfuls on to cookie sheet.

    Bake for 22 - 25 minutes.
