Icebox Cookies

    Serving size: 1 cookie


    Ingredients

      1 C flour
      1/4 tsp baking soda
      1/8 tsp salt
      1/4 C butter, softened
      2/3 C sugar
      1 tsp vanilla extract
      1 lg egg white
      Cooking spray


    Combine first 3 ingredients in a bowl; set aside. Beat butter with a mixer at medium speed until light and fluffy. Gradually add sugar, beating at medium speed until well blended. Add vanilla and egg white; beat well. Add flour mixture; stir until well blended.

    Turn dough onto wax paper, and shape into a 6-inch log.

    Wrap in wax paper; freeze 3 hours or until firm.

    Preheat oven to 350°

    Cut log into 24 (1/4-inch) slices, place 1 inch apart on a baking sheet coated with cooking spray.

    Bake at 350° for 8 to 10 minutes. Remove from pan, and cool on wire racks
