Mint Meringues

    Yield: 28 Meringues,1/2 Unit per cookie


    Ingredients

      2 egg whites
      1/8 t. salt
      1/8 t. cream of tartar
      2/3 C sugar
      few drops green food color
      few drops mint extract
      1 C mini chocolate chips (opt.)


    Preheat oven to 350 degrees. Beat eggs until foamy. Gradually beat in sugar, the beat on high until stiff peaks form. Add mint and food coloring, then fold in chips. Drop by small mounds onto well greased cookie sheets. Turn off oven and leave in overnight, or 6 to 8 hours. They come out all puffy in the morning. Remove from the pan very carefully, they are fragile and they really stick!
