Hamentashen

    Ingredients

      Dough: 2 lge eggs
      1/2 C sugar
      1/2 C vegetable oil
      1 tsp vanilla
      1 whole orange -- juice and grated rind
      2 1/2 C flour -- sifted
      2 tsp baking powder
      1/4 tsp salt

      Egg Wash : 1 egg -- (beaten with 1 tsp water)

      Filling:

      1/2 lb. prunes, pitted
      1/2 C raisins
      1 whole lemon -- juice &grated rind
      1/2 C sugar
      1/2 C walnuts -- chopped


    Combine dough ingredients in the order listed, sifting flour, baking powder, salt together. Refrigerate for 3 hours.

    Filling:

    Pour boiling water to cover prunes and raisins,soak until soft. Dry well,Chop prunes, add remaining ingredients.

    Preheat oven to 350°.

    Cover cookie sheet with tin foil, Roll dough to 1/4" thickness.
    Cut in rounds with a glass, Put 1 tsp filling in center, Draw up 3 sides to form a triangle, Pinch edges firmly with floured fingertips. Brush tops with egg wash.

    Bake at 350°F. for 25-30 minutes.

    Freezes well.
