Ingredients
1 egg white
2 eggs
3 med sweet potatoes, cooked and peeled
1/4 C brown sugar
1 (8 oz) can crushed pineapple, undrained
3/4 C evaporated skim milk
1 tsp vanilla
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1/4 tsp ground cinnamon
1 uncooked pie crust (9 inch)
Preheat oven to 425 degrees.
Beat egg whites and eggs with wire whisk. Mash sweet potatoes with a potato masher and combine with the egg mixture.
Add remaining ingredients and mix well to combine.
Pour mixture into pie shell and bake for 10 minutes.
Reduce heat to 325 degrees and bake another 45 minutes. A knife inserted in the center of the pie should come out clean when pie is done.
