Ingredients
1 C flour
1/4 C unsweetened cocoa
1 tsp baking soda
1/4 tsp salt
1/2 C sugar
1/4 C solid veg. shortening
1 egg white
1/2 C LF (1%) milk
3/4 C marshmallow creme
Preheat oven to 425. Combine flour, cocoa, baking soda, and salt in small bowl. With mixer on medium, beat sugar, shortening and egg white in a medium bowl until fluffy and well blended, about 2 minutes. Stir in the flour mixture, then milk, until just blended.
Drop the dough by spoonfuls onto large, ungreased baking sheets, making 36 cookies. Bake until top springs back when lightly touched, 5-7 minutes.
Cool completely on sheets on a rack. Spoon 2 tsp marshmallow on bottoms of half the cookies. Top with the remaining cookies. Store in airtight container for up to 3 days.
