Carrots W/Fennel

    Ingredients

      3 C baby carrots
      3 T port wine
      1 T fennel seeds
      1 T olive oil
      Fresh ground pepper and salt to taste


    Preheat oven to 350 degrees. Tear aluminum foil into 6 pieces large enough to seal carrots.
    Divide all ingredients evenly among the 6 pieces of foil. Crimp to seal. Place packets in the oven and bake for 15 minutes, until carrots are tender.
