Chicken, Spinach, and Shell Soup
Yield: 4 servings (About 1-1/4 cups each)

Ingredients
2 tsp olive oil
1 sm onion, chopped
2 cloves garlic, minced
1/2 lb fresh spinach, washed and chopped
3 C –FF-RS chicken broth
1 C whole tomatoes, drained and chopped
1/2 lb boneless, skinless, chicken breasts,
cut into 1/2-inch pieces
1 C cooked sm shell macaroni
Salt and pepper, to taste
4 T grated Parmesan cheese
In a large pot over medium-high heat, heat the oil. Add onion and garlic saute for 4 minutes.
Add spinach cook for 2 minutes until spinach is wilted. Add broth and tomatoes bring to a boil. Lower heat and simmer 15 minutes.
Add chicken simmer for 5 minutes until chicken is cooked through.
Add cooked shells season with salt and pepper. Top each soup bowl with Parmesan cheese.
