Chinese Chicken with Cashews

    Ingredients

      2 med onions, sliced vertically
      1 C broccoli florets
      1 lb boneless, skinless chicken breasts
      cut into 2-inch cubes
      3 green onions, minced
      2 tsp minced ginger
      3 garlic cloves, minced
      3 T lite soy sauce
      1/3 C- FF, RS chicken broth
      2 tsp rice vinegar
      1/2 C toasted cashews
      2 tsp sesame oil


    Spray a wok or heavy skillet with cooking spray. Over medium-high heat, add the onions and saute for 5 minutes And Remove.

    Add more spray, stir-fry broccoli for 3 minutes and Remove. Add more spray, stir-fry chicken until it's no longer pink, about 7-8 minutes. Add green onions, ginger, and garlic stir fry for 2 minutes, Add the onions and broccoli back into the pan.

    Add soy sauce, broth, and vinegar. Cook for 1 minute. Add cashews and sesame oil and cook for 1 minute.
