Chocolate Cherry Bars

    Ingredients

      1/2 C stick margarine
      1/2 C granulated sugar
      1 egg, slightly beaten
      1/2 C cocoa
      1 tsp vanilla extract
      1/2 tsp baking powder
      1/8 tsp baking soda
      1/2 C flour
      1/2 C- low-sugar cherry pie filling
      2 T mini chocolate chips


    Preheat oven to 325 degrees. Spray 8x8-inch baking pan with cooking spray.

    In a medium saucepan melt margarine, add sugar, stir until smooth and slightly cooled, 2 minutes.. Blend in egg, add cocoa, vanilla, baking powder, and baking soda; stir until cocoa is fully incorporated, 1 minute.. Add flour, stir just until smooth, 1 minute.

    Spread batter in prepared baking pan, top evenly with pie filling.

    Bake until top becomes slightly crusty, 8 to 10 minutes, then sprinkle the chocolate chips.

    Bake until toothpick inserted into the center comes out clean with a few moist crumbs, about 8-10 minutes.
