Citrus Pumpkin Pudding

    Ingredients

      1 pkg (3.9 ounces) instant lemon, or orange, pudding and pie filling
      1 C light lemon, or orange yogurt
      1 C canned pumpkin
      1 T grated lemon, or orange, rind
      1 tsp pumpkin pie spice
      1 C light whipped topping
      Light whipped topping, as garnish
      Chopped pecans or walnuts, as garnish


    Mix pudding pie filling and lemon yogurt in medium bowl on low speed 1 minute.. Beat in pumpkin, lemon rind, and pumpkin pie spice, fold in 1 cup light whipped topping.Spoon into serving dishes, top with light whipped topping and sprinkle with pecans.
