Cran-Raisin Chutney

    Yield: 40 servings (1 tablespoon each)

    Ingredients

      1 can (10 oz) whole cranberries
      Peel of 1 lemon
      1/4 C raisins
      1 tsp grated ginger
      1 tsp dry mustard
      1 green apple/peeled/cored/diced
      1 onion/chopped
      1/2 red/green or yellow bell pepper/chopped
      1/2 C apple cider vinegar
      1/4 C brown sugar
      1/2 tsp salt
      1 clove garlic/minced


    Combine all ingredients in a saucepan; simmer, stirring frequently, until mixture thickens, about 1 hour. Cool and store in refrigerator until ready to serve.
