Crustless Dill Spinach Quiche W/Mushrooms & Cheese

    Ingredients

      10 oz fresh spinach
      2 tsp vegetable oil
      1 tsp minced garlic
      3/4 C chopped onions
      3/4 C chopped mushrooms
      2/3 C 5% ricotta cheese
      2/3 C 2% cottage cheese
      1/3 C grated Cheddar cheese
      2 T grated Parmesan cheese
      1 whole egg
      1 egg white
      3 T chopped fresh dill/or 2 tsp dried
      1/4 tsp ground black pepper


    Preheat oven to 350 degrees. Spray 8 inch springform pan with vegetable spray.

    Wash spinach shake off excess water. In the water clinging to the leaves, cook spinach over high heat just until it wilts. Squeeze excess moisture, chop and set aside.

    In large nonstick skillet, heat oil over medium heat; add garlic, onions and mushrooms cook for 5 minutes or until softened.
    Remove from heat add chopped spinach, ricotta, cottage cheese, Cheddar cheese and Parmesan cheese, whole egg, egg white, dill and pepper; mix well. Pour into prepared pan and bake for 35 to 40 minutes or until knife inserted in center comes out clean.
