Easy Muffins

    Yield: 12 servings

    Ingredients

      2/3 C sugar
      1/2 tsp salt
      2-1/2 C flour
      1 T baking powder
      1 lg egg
      1/3 C vegetable oil
      1-1/4 C- RF milk
      1 tsp vanilla extract


    Preheat oven to 400 degrees. Combine sugar, salt, flour,and baking powder.
    In a separate bowl, combine liquid ingredients.
    Make a well in the center of the dry ingredients,add liquid ingredients.
    Mix with a fork until it forms a loose batter.

    Lightly coat muffin pan with nonstick cooking spray. Spoon batter until cups are 3/4 filled.

    Bake 18-20 minutes, or until tops are golden brown and centers are firm.
