Festive Sweet Potatoes

    Ingredients

      4 sweet potatoes (3-4 oz each)
      2 C crushed pineapple,in its own juice
      2 tsp cinnamon
      1 tsp nutmeg
      1 T slivered almonds (garnish)


    Cook sweet potatoes, either boil, unpeeled,in a large pot medium heat for 45 minutes, uncovered,Or bake in a preheated 375 degree oven directly on rack for 45 minutes to 1 hour.

    Preheat the oven to 350 degrees. Cool potatoes then peel them.

    Mash potatoes with pineapple and spices. Put in 1-quart casserole dish and top with slivered almonds.

    Bake for 20 minutes until potatoes are lightly browned.
