Fusili W/Sun Dried Tomatoes

    Ingredients

      8 oz vegetable flavored fusili or rotelles
      1 T virgin olive oil
      1/2 tsp hot pepper flakes
      2 lg garlic clove/minced
      2 green onions/chopped
      2 T sun dried tomatoes/chopped
      1 T chopped gingerroot
      1 T grated orange zest
      1 T tomato paste
      1/2 C drained/chopped Italian plum tomatoes
      1/4 C chicken broth
      Salt & pepper to taste
      2 T chopped chives
      1 tsp sesame oil


    Cook pasta until al dente, 8 to 10 minutes.

    Drain and set aside. In a large skillet, heat oil, add pepper flakes, garlic, green onions, sun dried tomatoes, gingerroot and orange zest. Stir-fry 1 minute; add pasta and stir-fry 1 minute more.

    Add tomato paste, plum tomatoes, gingerroot and orange zest. Stir-fry 1 minute; then add pasta and stir-fry 1 minute more. Add tomato paste, plum tomatoes, broth, salt and pepper. Mix all ingredients well. Cook until heated through. Garnish with chives and drizzle with sesame oil.
