Ingredients
3/4 C dry bread crumbs, divided
1 T vegetable oil
1 med onion, finely chopped
2 garlic cloves, minced
1 tsp dried thyme
3 C warm cooked brown rice
1 med carrot, peeled and grated
1/3 C chopped fresh parsley
1/4 C grated Parmesan cheese
3 T light soy sauce
2 eggs
Preheat broiler. Coat a rimmed baking sheet with cooking spray. Place 1/2 cup bread crumbs in a shallow dish; set aside.
In a large skillet, heat oil over medium-high heat. Sauté onion, garlic, and thyme for 4 to 5 minutes, or until onion is tender; transfer to a large bowl.
Add remaining ingredients except the reserved bread crumbs; mix well. Form mixture into six 1/2-inch-thick patties, coat with reserved 1/2 cup bread crumbs. Place on
baking sheet and broil for 6 to 7 minutes per side, or until golden and heated through.
