Green Bean Salad

    Ingredients

      12 oz fresh sm green beans,ends trimmed
      8 fresh mushrooms, sliced
      1/2 C chopped red onion
      3 T canola or corn oil
      1 T balsamic or red wine vinegar
      1 clove garlic, minced
      1/2 tsp salt
      1/4 tsp freshly ground pepper


    Cook green beans in large pot of boiling water for 5 minutes, drain. Plunge beans into a bowl of ice water to stop the cooking and retain their bright green color. Drain place in a large bowl. Add mushrooms and onions to the beans, toss to mix.

    Dressing:

    In a small bowl whisk oil into the vinegar, add remaining ingredients and pour over green beans, toss lightly. Serve immediately.
