Ingredients
10 oz pkg frozen chopped/spinach/thawed/squeezed dry
1/4 C coarsely chopped black olives
1/4 C FF or light mayonnaise
3 T crumbled RF feta cheese W/sun-dried tomatoes and herbs
8 slices firm multigrain, pumpernickel,or dark rye bread or 4 multigrain burger buns
12 thin slices plum tomato
3/4 C alfalfa or spicy sprouts
4 oz thinly sliced RF provolone or Swiss cheese
2 T Dijon mustard
Place spinach in large skillet over medium heat. Cook, stirring frequently, until spinach is heated through and excess liquid has evaporated.
Remove from heat, stir olives and mayonnaise, then feta cheese.
To assemble sandwiches, place quarter of spinach on each bread slice. Top with a quarter of the tomatoes, sprouts, and cheese.. Spread mustard on remaining 4 bread slices. Place on a microwave-safe plate, cover with a paper towel. Microwave for 30 seconds, just until the cheese is melted. Serve hot.
