Oyster Stew

    Servings: 4 (1 quart)

    Ingredients

      2 T margarine
      2 T flour
      2 C -FF milk
      1 tsp Worcestershire sauce
      3/4 tsp salt
      Dash hot pepper sauce
      2 C shucked oysters/un-drained
      1 T minced fresh parsley


    Melt margarine in a medium-sized pot. Remove from the heat.

    Gradually add flour, mixing until smooth. Continue whisking over low heat until the consistency of a thin white sauce. Add the Worcestershire sauce, salt, and hot pepper sauce.

    In a separate pot, simmer oysters in their own juice just until the edges curl. Add oysters and juice to the sauce.

    Heat through but do not boil or the oysters will toughen.

    Serve hot, garnished with minced parsley.
