Ingredients
2 T vegetable oil
1 tsp salt
1/4 tsp black pepper
1/4 tsp garlic powder
1/4 tsp onion powder
12 plum tomatoes
2 T chopped fresh basil
Preheat the oven to 450 degrees F. In a large bowl, combine
all the ingredients except the tomatoes and basil.
Cut the tomatoes in half lengthwise and gently squeeze out the seeds and juice. Toss in the oil mixture then pour into a 9" x 13" baking dish.
Roast for 20 to 25 minutes, or until tender but not overcooked. Sprinkle with the basil, and serve.
