Ingredients
3/4 lb boneless skinless chicken breast
Olive oil cooking spray
Salt & black pepper to taste
1 C bottled chunky no-added-sugar tomato salsa
Cut breasts into 2-6oz portions, flatten with bottom of heavy skillet or palm of your hand to 1/2 inch thick.
Heat & spray skillet, add chicken, brown 2 minutes each side. Salt and pepper the cooked side.
Lower heat and spoon salsa over each chicken portion. Cover and cook 5 minutes.
Serve chicken with salsa on top.
