Spinach Sauté with Mushrooms

    Yield: 4 servings (1/2 cup)

    Ingredients

      2 T olive oil
      2 cloves garlic, minced
      1 C mushrooms, sliced
      3 bunches spinach (about 2 lbs), stemmed and washed
      1 T lemon juice
      Salt & pepper, to taste


    In a skillet over medium heat, heat oil. Add mushrooms and garlic, sauté for 3 minutes.

    Add spinach cover, and steam 2 minutes. Add lemon juice, salt, and pepper. Serve immediately.
