    Spinach & Mushroom Salad

    Ingredients

      6 C fresh spinach leaves
      1 C sliced fresh mushrooms
      2 slices red or sweet white onion,(rings)
      1/4 C shredded carrot
      2 hard-boiled eggs/chopped
      2 slices turkey bacon/cooked/drained/crumbled
      1/4 C shredded NF or RF cheddar cheese
      1/2 C Buttermilk-Herb Dressing or light ranch dressing


    Combine spinach, mushrooms, onion, and carrot in a large bowl toss to mix. Place quarter of salad on each of 4 salad plates and top with eggs, bacon, and cheese.

    Serve immediately accompanied by the dressing.
