Strawberry Crepe Roll Ups

    2 Units per serving (2 filled crepes)


    Ingredients

      1-1/4 C- FF milk
      3/4 C egg substitute
      3/4 tsp vanilla extract
      1 C flour
      1 tsp sugar
      1/4 tsp salt
      3/2 C strawberry spreadable fruit
      3 C chopped fresh strawberries
      2 tsp confectioners sugar


    In a mixing bowl combine milk, egg substitute and vanilla. Combine four, sugar, and salt: add to milk mixture, mix well. Cover and refrigerate for 1 hour.

    Coat a 7-or 8 in nonstick skillet with cooking spray. Heat skillet over medium heat.. Pour about 2 tablespoons batter into the center of skillet. Lift and tilt pan to evenly coat bottom. Cook until top appears dry: turn and cook 15-20 seconds longer. Remove to plate: keep warm. Repeat with remaining batter, coating with cooking spray as needed.

    Spread each crepe with 2 teaspoons of spreadable fruit.
    Top with 3 tablespoons strawberries.. Roll Sprinkle with confectioner’s sugar.
