Strawberry Spinach Salad

    Ingredients

      1 pkg (10 oz) fresh baby spinach/washed/dried/trimmed
      1 pt strawberries/cleaned/sliced lengthwise to 1/4-inch thick
      1/2 sm onion, finely/chopped
      2 T sugar
      3 T water
      2 T white vinegar
      1/2 tsp dry mustard
      1/4 C canola or vegetable oil


    Place spinach in a large salad bowl; add strawberries.
    In a small bowl, combine onion, sugar, water, vinegar, mustard, and oil. Whisk until well combined. Drizzle dressing over the salad and toss to coat. Serve immediately.
