Sweet Potato Fries
Yield: 4 servings (1 potato per serving)

Ingredients
4 sm sweet potatoes, peel left on
1 T olive oil
Salt and pepper to taste
Cinnamon to taste
Preheat oven to 450 degrees. Slice potatoes lengthwise then cut into 2-inch strips, ending up with about 20 slices per potato.
In a bowl, toss potatoes with oil, salt, pepper and cinnamon. Spread the potatoes in a single layer
on a large baking sheet. Use two sheets if you need to.
Bake at 450 degrees F. for 25 minutes until soft and crunchy.
